The temperature of the water during brewing affects flavor and extraction. Be sure to occasionally check for correct temperature. Ideal water temperature for brewing: 195º – 205ºF (92º – 96ºC)
- Ensure coffee brewer operates at correct temperature.
- Ideal brewing temperature 200 degrees plus or minus 5 degrees.
- Too low a temperature causes under-extraction. Flavor compounds do not dissolve, resulting in weak coffee.
- Too high a temperature causes flavor change, as elevated temperature decomposes the organic material.
- Temperature should be checked with a thermometer with the sprayhead off.
